Every once in a while I see a recipe that makes me want to rush to the kitchen and begin cooking immediately -- this is one of them! Taken from the stunning World Food Cafe cookbook sweet potatoes in cayenne, ginger and groundnut sauce is a Malian dish that combines some of my favorite flavors. The rest of the World Food Cafe cookbook is equally delectable looking. If you are a fan of food and/or travel it is absolutely worth ordering -- the food is divine and the photography is incredible. Without further ado:
Ingredients
- 4tbsp sunflower oil
- 1 large onion, cubed
- 4 garlic cloves crushed
- 2in piece of root ginger, peeled and finally copped
- 1 1/4lb sweet potatoes, cubed
- 1lb white cabbage, cubed
- 1 dessertspoon paprika
- 1tsp cayenne pepper
- 14oz chopped plum tomatoes (fresh or canned)
- 1cup pineapple juice
- 4oz smooth peanut butter
- salt and pepper
For garnish:
- 2 medium carrots, grated
- 2 medium raw beets, grated
- 2 bananas, sliced
- juice of 1 lime
- handful of choppped cilantro
Preparation
- Heat the sunflower oil in a large heavy pan
- When hot, fry the onion until soft
- Add the garlic and ginger, fry for a few minutes, then add the sweet potato and cabbage
- When the vegetables start to soften, add the paprika and cayenne pepper
- Stir to coat the vegetables with the spices. Add the chopped tomatoes and pineapple juice. Cover the pan and simmer until the vegetables are soft
- Stir in the peanut butter until well combined. Season to taste
- Toss the carrot, beet and banana garnish in lime juice and sprinkle over the dish, together with the cilantro
- Serve with rice
