Winter Recipes: chef-inspired ginger spice pancakes

These pancakes, courtsey of Chef Nicole Pederson at Chicago's C-House, offer a welcome invitation to hibernate on winter weekends. Add these to your next breakfast in bed, with a dollop fresh whipped cream.

Ginger Spice Pancakes


  • 2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tbls dark brown sugar
  • 2 tbls granulated sugar
  • 1 tsp salt
  • 2.5 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground clove
  • 1/4 tsp ground allspice
  • 1 1/4 cup milk
  • 1/4 cup unsulfured dark molasses
  • 1/4 cup sour cream
  • zest of one orange
  • 2 eggs, beaten
  • 3 tbls melted butter


Combine all dry ingredients and mix thoroughly. Combine all wet ingredients separately (except butter) and whisk until smooth. Add wet ingredients gradually to dry ingredients until just combined, then fold in the melted butter.

* Remember to test a smaller pancake size to make sure the griddle is warm. Ladle out pancakes in even spoonfulls, flipping when bubbles begin to form on top side, approximately 3-5 minutes total.
