Grizzly Peak Brewing Company opened in August of 1995, and has become a landmark in downtown Ann Arbor. Grizzly Peak is housed in a century-old building with wood floors, tin ceilings and exposed brick walls, which create a warm, casual atmosphere. The progressive menu focuses on fresh ingredients and seasonal "from-scratch" favorites.
The on-site brewery is a seven-barrel system installed by Alan Pugsly of England. The brick-sided, copper-topped brew kettle faces the sidewalk, and patrons can watch beer being brewed from the street or from inside the dining room. The beer used in this recipe, Victors' Golden Ale, is brilliantly gold and lightly malty with a gentle hop character. A refreshing ale for any season.
Cheddar Ale Soup
Ingredients:
- 1 large white onion sliced
- 2 carrots peeled and sliced
- 2tbsp of fresh thyme
- 1tbsp of minced garlic
- 1 bay leaf
- 1.5 tsp of white pepper
- 1 pint of Grizzly Peak Golden Ale
- 3 quarts of chicken stock
- 1 pint of heavy cream
- 1/2 lb of margarine
- 1/2 lb flour
- 2.5 lbs of cheddar cheese shredded
Method:
Melt margarine in thick walled pot and add onions and carrots. Saute till the vegetables are translucent and tender. Add flour and stir on low heat for 20 minutes, till the flour has a light golden color.
Add thyme, bay leaf, pepper, and cook for another 5 minutes. Add beer, chicken stock, heavy cream and bring to a boil. With a hand blender or blender add the cheddar slowly to the soup and process till smooth. Adjust with salt and pepper to personal taste.
Strain out any pulp from onion and carrots. Serve and enjoy.
Yield: 6-8 servings
