Winter recipe: A mojito that'll make you think of summer

All winter long we eat cold-weather foods.  They seem to suit our moods and our needs.  It's dark and rainy and only a hot soup will do.  But sometimes it's fun just to mix things up a little, to play with our imaginations and create the summer mood in the middle of a gloomy January day. 

So fire up the (indoor) grill, turn on the mariachi music and fix yourself a mojito.  It's amazing how your spirits (no pun intended) will lighten.

Wintertime Mojito

Ingredients:

  • 2 tablespoons sugar
  • 2 tablespoons lime juice
  • 1/4 cup fresh mint leaves
  • 2 ounces rum
  • 1/4 cup water and ice

Directions:

Mix together the sugar and lime juice until sugar is dissolved.  Mash (or "muddle") the mint leaves to release the oils.  Add rum, water and ice.  Relax and enjoy.  And think of summertime...
