As winter drags on and the snow, ice and freezing weather keep coming; why not put together a quick Herbed Tomato Soup to warm you from the inside out. This is a simple recipe that only takes a few minutes to prepare and would be great for lunch, or pair it with a sandwich for a complete dinner.

After preparing your soup, you can top it with shredded cheese. Try a Parmesan or Romano. You could also add shredded cheddar cheese. For something a little different, try adding a spoonful of sour cream or pesto. You could also try fresh herbs, such as parsley or basil.

Herbed Tomato Soup

  • 1 teaspoon olive oil
  • 1 teaspoon minced garlic
  • 1 19 oz can herbed tomatoes
  • 2 cups beef broth
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 roasted red peppers, optional
  • 1/2-1 cup croutons, optional

Heat olive oil in a saucepan over medium heat. Stir in minced garlic cooking for about 1 minute. Add the beef broth and tomatoes, as well as roasted red peppers if using. Cover and heat on medium high heat until it comes to a boil. Stir in salt and pepper and lower heat to medium low. Cover and cook for additional 2-4 minutes. Garnish with croutons and cheese if desired. Serve hot.
