Although Chicago steakhouses are far from the endangered species list on Chicago’s restaurant scene, obtaining a good wine deal from one of them can be quite “rare” – so to speak.
At III Forks, in Chicago’s Lakeshore East neighborhood, USDA prime – and the premium associated with it – is the standard bearer. And Wine Director Lance Gresak has assembled a wine list with a wallop. But he also knows how to seek out primetime wine values – and to also establish initiatives that accentuate more approachability.
One such promotion is the “Wine Down Wednesday” event at III Forks, which takes place every week from 5-7 p.m. Six different wines are featured, and reservations are not required for the $15 event. Gresak, along with a variety of local wine representatives, discuss the wines in detail; the event includes an unlimited sampling of the wine and paired, passed appetizers created by Chef Clark Grant.
“I like to have conversations (with guests) about what kind of wine fits one’s flavor profile,” Gresak says. “From there, I’ll recommend something that will represent the price-to-quality ratio.”
Value wine has represented a passionate search for Gresak, and customers at III Forks can choose from high-end Cabernets to hand picked, obscure gems on a diverse wine list.
“When I started to really venture out and expand my horizons (with value wines), I ultimately discovered what I care about in this business: finding what people really want.”
