Here’s an engaging concept from a restaurant: a Wine and Salt Pairing Dinner.

Most wine people will dexterously avoid the subject of salt and its impact on wine. Heavy doses of salt will often interact unfavorably with wines, which do a disservice to both the wine and the food.

Yet salt is an everyday---and all too often over-used---component of cooking, and thus unavoidable when wine is on the table.

Rather than shy away from the conundrum of salt and wine during a meal, Wildwood restaurant is embracing and exploring it creatively. The bartender, the sommelier and the chef, in conjunction with Ben Jacobsen from Oregon’s Jacobsen Salt Company, is putting on a carefully orchestrated, palate-challenging evening of wine, spirits, salts and foods on March 22, 2013.

Wildwood bartender, Ryan Csanky, a distiller in his own right (Aria Portland Gin), will start the evening with “Ryan’s Salty Cocktail.” Sommelier Savanna Ray, who originally conceived the idea for the meal, will then work with Wildwood Chef Dustin Clark and the folks at Jacobsen Salt Company, a noted producer of gourmet sea salts, to dish up an impressive four course meal accompanied by Oregon salts and Oregon wines.
