What you will need:
1/3 Cup Chicken broth
1/4 Cup uncooked couscous
1 TSP salt
2 Roma Tomatoes, chopped
1/4 Cup Kalamata Olives, chopped
1/4 Cup Feta Cheese
2 Cloves Garlic, Chopped
2 TSP Fresh Oregano
1 TSP Grated Lemon Rind
Cooking Spray
Boil broth in a small sauce pan and add couscous, remove from heat and let stand for 5 minutes. Add couscous to a bowl with salt, tomato, olives, cheese, and oregano and mix well.
Pound out the chicken flat and divide the couscous mixture evenly on the center of the breasts. Roll up the breast and close with a tooth pick.
Preheat oven to 400 Degrees
Heat a saute pan over high heat and spray with cooking spray. Add the rolled up chicken to the pan and cook for 6 minutes on each side, or until browned. Transfer to a sheet tray and place in the oven for another 5-6 minutes or until the chicken is cooked throughout.
