This great, currently in-season vegetable is thankfully popping up more and more in restaurants and bars. We have seen it on pizzas, but now we are seeing it used as a meaty replacement for those who don’t want to eat meat as frequently (or those who just love its smoky flavor).
It can be roasted, baked and whipped into myriad dishes. Arak, an anise-flavored spirit beloved in the Middle East, is often the drink of choice with eggplant right off the BBQ, according to Ben Khader, a partner in two restaurants, Yafa and Demetra in Carmel. His backup choice would be white wine--although many of his customers like red--for its crisp, refreshing flavors.
