West-side Irish potatoes: Cleveland style

Potatoes. Irish. Famine. And then there is Cleveland's original west side Irish recipes.

I ought to know - I am one of them! Here is a modern update without the fuss, fanciness, and/or famine. But still fabulous!

Cleveland's west side potato side (west of the Cuyahoga, that is)

1 stick unsalted butter

1 envelope Good Seasons Italian Dressing mix

1/4 cup Parmesan cheese (fresh grated is best)

Pinch of kosher salt

6 medium Idaho potatoes

Preheat oven to 350 F.

Melt margarine in 9 X 13 glass casserole dish by placing both in 350 F. oven. When butter is melted remove from oven and sprinkle dry dressing mix over butter. Add cheese and salt. Mix to combine and set aside.

Wash potatoes and slice in half lengthwise. No need to peel. Place cut side down in butter mixture. Bake uncovered at 350 F for 45 minutes.

Great with steak, beef and maybe an occasional corned beef.
