This recipe has a great taste and is also has the perfect image for any summer event! Make sure to prepare your ice cream maker the night before if it calls for freezing the bowl.
1 cup water
1 cup sugar
1/3 cup lime juice
1 cup mini chocolate chips.
Create a simple syrup by heating the water and sugar over medium heat. Bring to a boil and dissolve the syrup, then allow to cool.
Cut the watermelon in a half lengthwise. Remove the contents of the watermelon until you’ve just got the rind left in the shape of a bowl. Cube the watermelon and blend well. Add in the simple syrup and lime juice. Blend once more until completely smooth. Put this mixture in an ice cream machine with your chocolate chips (this will look like seeds), and follow instructions for freezing depending on your machine.
Spread the frozen sorbet evenly in the rind “bowl”. Place in the freezer for 15 minutes before serving to allow it to set- this isn’t a must, but it will make scooping so much easier!
If you don’t want to scoop the sorbet, cut the entire watermelon into slices as you would normally serve the fruit- just make sure you enjoy your treat quickly so that it maintains its shape.
