
This recipe is so good and refreshing! I have to say it is one of the best Summer salads I have tasted! The recipe can easily be made to suit your personal taste.
Watermelon Salad
Ingredients can be adjusted, depending on personal taste.
- 7 cups watermelon, cut or scooped
- 1 cup feta cheese
- 1/2 red onion (sliced thin and quartered)
- 1/3 cup pine nuts (toasted)
- Arugula or baby spinach (cut), about 1-2 cups
- Fresh parsley (cut) , about 1/3 cup
- Fresh mint (cut), about 1/3 cup
Toast nuts on a cookie sheet in the oven for about 10 minutes or until lightly browned. Cut melon into small chunks or use a small cookie scoop to scoop out the melon. Mix everything together in a large bowl.
Dressing
- 1/2 cup olive oil
- 2 Tbsp. lemon juice
- 1/2 TSP salt
- 1/2 TSP pepper
Mix together and adjust according to taste.
