Mothers of years ago knew instinctively that a cup or bowl of hot soup, especially chicken & noodle soup was good for the body and soul. Not to mention that when you are under the weather, a bowl of that wonderful soup helps with the sore throats and sniffles.
Below is a healthy version full of good vegetables and flavor. Enjoy this soup with a side salad or your favorite sandwich or crusty bread.
Homemade Chicken & Noodle Soup
- 1 whole chicken
- 2 tsp. salt
- 1 tsp. black or white pepper
- 2 cans chicken broth
- 1 c. onions (diced)
- 1 T. celery flakes (or 1/2 cup of sliced celery)
- 1 c. carrots (diced)
- 1/2 tsp. poultry seasoning
- 1 tsp. parsley (dried)
- 12 oz. pkg. dried noodle (thin)
Clean the cavity of the chicken and rinse with cold water; pat dry with paper towels. In large Dutch pot place chicken in pot and fill with enough water to cover the completely. Add salt and black pepper; cook over low heat simmering for 1 hour or until chicken is done.
Remove chicken and let cool. Add chicken broth, onions, celery, carrots, poultry seasoning and parsley. Simmer over low heat for another 30 minutes. Remove chicken from bones. Cut chicken into small bite size pieces, add to broth. Continue cooking for another 30 minutes, adding more chicken broth if needed.
Add dried noodles and stir. Simmer over low heat until noodles are tender. Taste broth to see if more salt or black pepper are needed. Serve in soup bowls and crusty bread or crackers.
