Vietnamese pork chops

If you've never had Vietnamese pork chops you are missing out on an excellent and bold flavor pork chop. Many people are familiar with Vietnamese soups but the hidden jewel of Vietnamese cuisine is the pork chops. Vietnamese barbecue is not the same as American style barbecue, they grill meat on an open flame grill but they use their own style of marinade to the meat.

1 small shallot, finely chopped
1/3 cup brown sugar
1/4 cup fish sauce
2 tablespoons unseasoned rice vinegar
1 teaspoon freshly ground black pepper
4 1-inch pork chops
1 tablespoon vegetable oil
Kosher salt
Lime halves

(Chops can be marinated 1 day ahead.)

Grill or Pan fry on medium 7 min per side till done.
