Veggie Packed Vegan Nachos
Gluten-Free, Dairy-Free and Vegan
- 1 bag corn tortilla chips
- 1 bag GO Veggie! Vegan Mexican Cheese Shreds
- 1 cup salsa
- 1cup fresh baby spinach
- 1 cup kale, finely chopped
- 1 cup Swiss Chard, chopped
- 1 ripe avocado, peeled, pitted and diced
- 1 cup cherry tomatoes, halved
- 1/4 tsp. sea salt
- 1/2 tsp. chili powder
- 1/4 tsp. pepper
- 1/4 cup finely chopped fresh cilantro
- Preheat oven to 350 degrees F.
- Place chips on a baking sheet; top with remaining ingredients; bake for 20 minutes or until cheese has melted.
- Remove from oven; serve warm!
