Veggie Packed Vegan Nachos

Gluten-Free, Dairy-Free and Vegan

Serves 4

Ingredients

  • 1 bag corn tortilla chips
  • 1 bag GO Veggie! Vegan Mexican Cheese Shreds
  • 1 cup salsa
  • 1cup fresh baby spinach
  • 1 cup kale, finely chopped
  • 1 cup Swiss Chard, chopped
  • 1 ripe avocado, peeled, pitted and diced
  • 1 cup cherry tomatoes, halved
  • 1/4 tsp. sea salt
  • 1/2 tsp. chili powder
  • 1/4 tsp. pepper
  • 1/4 cup finely chopped fresh cilantro

Directions

  1. Preheat oven to 350 degrees F.
  2. Place chips on a baking sheet; top with remaining ingredients; bake for 20 minutes or until cheese has melted.
  3. Remove from oven; serve warm!
