What You Need:
(Makes: 6-8 servings)
2 cups of uncooked penne pasta
1/3 cup of onion, finely chopped
1 small yellow summer squash, sliced
1 small zucchini, sliced
1/2 cup of fresh mushrooms, sliced
1 teaspoon of garlic, minced
3 tablespoons of butter
1 tablespoon of all-purpose flour
1/2 teaspoon of salt
1/4 teaspoon of dried parsley flakes
1/4 teaspoon of dried thyme
1/4 teaspoon of pepper
1/4 cup of heavy whipping cream
What to Do:
STEP 1) Cook the pasta according to package directions. Meanwhile, in a large skillet, sauté the onion, summer squash, zucchini, mushrooms and garlic in butter until tender.
STEP 2) In a small bowl, whisk the flour, salt, parsley, thyme, pepper and cream until smooth; add to the skillet. Cook mixture for 2 to 3 minutes or until thickened. Drain pasta and add to vegetable mixture. Cook the pasta mixture for 2 to 3 minutes or until heated through.
