Vegetarian Bacon Lettuce and Tomato Sandwich

In honor of national sandwich day, here is a vegetarian version of the classic BLT (bacon, lettuce, and tomato) sandwich.

Ingredients

For each sandwich, you will need:

  • 2 slices of your favorite bread.  (Try Private Selection Golden Flax and Grain from Kroger.)
  • 2 or 3 slices of tomato
  • 3 or 4 slices of your favorite imaginary bacon
  • 2 or 3 lettuce leaves
  • Mayo,if you like it, or smooshed ripe avocado for an extra special treat

Directions

  1. Toast the bread.
  2. Spread with mayo, if using, or smooshed avocado.
  3. Add imaginary bacon, lettuce and tomato.
  4. Assemble and enjoy. Delicious!
