An easy and tasty lunch, dinner or even a snack can be at your fingertips in minutes with this yummy vegetable wrap. Short on ingredients, yet packs a vitamin loaded punch; this recipe is a great midday pick-me-up sure to satisfy the mildest to the spiciest of pallets.
1 burrito size tortilla
¼ cup spinach
3 Tbsp hummus
2 Tbsp diced tomatoes
2 Tbsp shredded carrots
1 tsp celery seed
Add peppers of choice for heat (optional)
Drizzle olive oil on inside of tortilla (optional). Place tortilla in microwave for 10 seconds. Remove from microwave. Distribute hummus evenly onto tortilla. Add spinach, hummus, carrots, tomatoes, celery seed, and peppers. Wrap tortilla and enjoy.
Please note that spinach can be substituted with your favorite leafy greens. Keep in mind that iceberg lettuce has a lower nutritional value than most other leafy greens. If going for basic leafy greens, romaine lettuce is a better option over iceberg because it has a greater nutritional value.
