Vegetable soup recipe

Need to eat more veggies? This is a great way. You can use the crockpot and allow this to simmer all day. Come home to a bowl of homemade vegetable soup.
Some people do not eat meat or anything that has been processed. So, this recipe can be made with or without stock.

For Soup:

  • Veggies of your choice, fresh or frozen
  • (Try: corn, cabbage, carrots, potatoes, squash, peas, broccoli and/or cauliflower)
  • Add 3-4 cups of vegetable or chicken stock into crockpot. For a larger crockpot, you can add more stock. (See below for homemade veggie stock)
  • Add vegetables.
  • Add salt, pepper, garlic powder and parley to taste.
  • Turn on low for 6 to 8 hours.

If you do eat meat, you can brown up some ground beef, turkey or chicken and add it to the soup when you add the veggies.

Vegetable stock:

  • In a pot on the stove add 8 to 10 cups of water.
  • To the water add: 2 potatoes, 2 carrot sticks and 2 celery sticks.
  • Add spices: salt, pepper, garlic powder, parley and basil, 1 tsp each.
  • Simmer on low for 1 hour.
  • Remove all vegetables. Strain until it runs clear. It may take 2 or 3 times.

Use this stock for your vegetable soup!
You can also freeze it in an airtight, zip top plastic bag for several months.
