Vegan Valentine's 2013 (Photos)

Looking to cook up a romantic, meatless meal for your sweetheart this Valentine's? With only a few days left to plan, quick and easy has to be at the forefront of anyone's mind. Here I will share two of my personal recipes that are both healthy and a cinch to make, and a few of my favorites from others that would also make a great choice!

Easy Curry-Crusted Tofu

The only preparation with this dish comes in the form of pressing the tofu. Wrap your drained tofu in paper towels or a clean cloth and place between two dishes, then put something heavy on top (I tend to stack a few cookbooks). Let it press for at least two hours (I let mine go for six to eight).

1 block firm tofu, pressed

1 tbsp coconut oil, melted

1 tsp red curry paste

3/4 c bread crumbs or panko

1/4 c nutritional yeast

1 tbsp garlic powder

2 tbsp curry powder

1/3 c reduced fat vegenaise

2 tbsp water

2-3 tsp red curry paste

2-3 tsp agave

Once your tofu is pressed, heat oven to 400F. In one bowl, melt the coconut oil in the microwave and then stir in the curry paste thoroughly. In a separate bowl, mix the bread crumbs, yeast, and powders. Slice the tofu into twelve equal rectangles. Coat the first slice in oil, and then coat in the bread crumb mixture. Place onto a baking sheet lined with parchment paper. Repeat for remaining slices. Bake for 25 minutes, flipping halfway through.

For the sauce, simply blend the remaining four ingredients. Adjust curry and agave to taste. The sauce should have a salad dressing consistency so if it is too thick add more water, a teaspoon at a time.

Serve tofu over a bed of mixed greens, and/or with some steamed vegetables. Drizzle with sauce. Pair with a Riesling.

Lowfat Mousse Dip

1 c plain, unsweetened soy yogurt (I use WholeSoy & Co brand)

1/2 c vegan unsweetened cocoa powder (I use Trader Joe's brand)

1/4 c agave nectar

Blend together until you get a fluffy mousse-like dessert. Scoop out of blender and refrigerate for an hour or more prior to serving. Provide strawberries, cherries, and/or pineapple for dipping.
