Vegan mac and cheese; an old favorite

Mac and cheese is a classic and a favorite amongst food; an old stand-by, an old college friend, that we all can't help but love.

Mac and Cheese

  • 3 c raw cashews
  • 2 c nutritional yeast
  • ½ c arrowroot powder
  • 3 tbsp garlic powder
  • 3 tbsp onion powder
  • 1 tbsp sea salt
  • 1 tbsp ground mustard seed
  • 2 tsp paprika
  • 1 tsp dried parsley
  • 1 tsp dried green onion
  • ½ tsp turmeric
  • ½ tsp ground pepper
  • 1/3 tsp cayenne pepper (or chili powder, for less heat)
  • ¼ tsp ground cumin

Using a blender, grind cashews into a fine powder.
In a container, combine all other ingredients and shake vigorously until well mixed.
Combine 1/2c with 1c water (or non-dairy milk for extra creaminess) in a pot.
Stir over medium heat until thickened and add to prepared pasta.
