Here’s an easy recipe that can be made gluten-free as well, takes little time, costs very little money and has lots of taste. You can serve four people for as little as seven dollars and that’s with the fancy addition of vegan sausage. Gluten-free pasta will costs a little more, but this delicious recipe is economical and so easy to prepare, you’ll enjoy the no matter what.
All you need are these ingredients:
· A pound of penne pasta (regular or gluten free)
· A bunch of fresh Kale
· 2 Tbs. Onion powder
· 1 Tsp. Salt
· Nutritional yeast (optional)
1 Field Roast brand Italian sausage link (optional)
Boil the pasta in the normal manner according to instructions on package. While the pasta is boiling, fill a large skillet about ¼-1/3 with water heat the water to a low/medium temperature. Wash the kale and remove the leaves from the stalks.
If using the Field Roast vegan sausage, cook the link on low heat while boiling pasta and cut into slices when it is cooked.
Pile the kale leaves into the skillet. The leaves will shrink as they heat up in the water. Push the leaves down into the water with a fork as they shrink. Add 1 & ½ TBS of onion powder and toss the kale gently in the water to spread spices and shrink the kale.
When kale is shrunk and warmed through, shred and place on pasta along with the vegan sausage. Sprinkle nutritional yeast over pasta if desired.
