If you’re lacking time and creative energy and need a quick, versatile topping that can serve as salsa or sauce, look no further than this recipe for easy tomato tofu topping. It requires ingredients that every vegan has in the house, takes literally minutes to prepare and can be served in many ways to one self or to a room full of guests watching the game.
½ block of extra-firm tofu
1 tbsp. olive oil
2 cans of stewed tomatoes including the juice.
1 Tbsp. fresh oregano or two tbsp. dry oregano
¼ tsp. salt
1 ½ tsp. onion powder
Heat the oil in a frying pan on medium and add the tofu, scrambling it into pea-size bits. Allow it to heat through, tossing it once and then add the tomatoes and spices. Allow the mixture to heat through until the tomato juice starts to boils slightly, and then remove from heat. Add a pinch of pepper if desired.
Serve over pasta, as a dip for crackers or wafers, on Chapatis or toasted tortillas.
Add a small can of chopped olives or mushrooms.
