Vegan Fried Rice and Vegetables Recipe

Here is a quick vegan meal you can make at home. Taking some shortcuts (but not with your health) like buying the fried rice premade (Trader Joe’s vegan fried rice-which can be found in the frozen foods section-is divine and healthy) makes this dish even easier!

Fabulous Fried Rice and Veggies

Serves 4

One bag of Vegan fried rice from Trader Joe’s (contains carrots and peas)

Two tablespoons oil (use any oil you prefer based on taste and wanted/unwanted calorie consumption. I tend to use olive oil because it has the best flavor)

1tbs non-dairy butter (I like Earth Balance but there is also a selection of almond butters and hemp butters you can use)

Two garlic cloves, minced

One zucchini, chopped in cubes

½ of medium onion, chopped

2 cups fresh spinach (not frozen)

1 can white beans

1 half block of standard organic baked tofu (also at Trader Joe’s-available in teriyaki or regular, or by all means, bake your own)

Red pepper flakes, sea salt, and pepper to taste

In a wok or large skillet, add oil, garlic, onions and spinach and sauté until onions are golden brown. Add zucchini and tofu and continue to sauté for 2-3 minutes. Add 1 tbs non-dairy butter, rice and stir continuously until rice has softened. Add white beans, red pepper flakes, salt, and pepper then cook on high heat for another 2-3 minutes.
