Vegan avocado panini melt

With Panini’s being all the rage these days – why not make your own?

Avocado Panini Melt

  • 4 slices bread
  • 8 slices meltable vegan mozzarella
  • 1 avocado
  • 1 sliced red onion ring; halved 1
  • tomato; sliced thinly
  • ½ c cilantrio; chopped
  • Extra virgin olive oil

Layer each slice of bread with 2 slices of mozzarella.
Evenly distribute the avocado, onion, tomato and cilantro.
Close the sandwich and lightly drizzle with the olive oil.
Grill for 5 minutes or until mozzarella is melted.
