With Panini’s being all the rage these days – why not make your own?
Avocado Panini Melt
- 4 slices bread
- 8 slices meltable vegan mozzarella
- 1 avocado
- 1 sliced red onion ring; halved 1
- tomato; sliced thinly
- ½ c cilantrio; chopped
- Extra virgin olive oil
Layer each slice of bread with 2 slices of mozzarella.
Evenly distribute the avocado, onion, tomato and cilantro.
Close the sandwich and lightly drizzle with the olive oil.
Grill for 5 minutes or until mozzarella is melted.
