Vegan 101: What Is a Good Way to Eat More Kale?

If one of your New Year’s resolutions is to move toward becoming vegetarian or vegan or, if you are already vegan, to eat more green, leafy vegetables and fewer, say, chips but you don’t know what to fix or perhaps how to fix it, why not try Harvest Sensations Organic Kale Salad? It is available in the produce section at Whole Foods. The package of fresh, ready-to-eat kale also contains sliced red cabbage and slivered carrots. Just dump it into a bowl. You can add your own dressing, or you could quite easily make the sesame dressing from the recipe on the package. The white spots in the accompanying photo of the sesame kale salad are the copious amounts of sesame seeds in the dressing. Yum. And as the package says, “Kale is the most nutritionally dense produce—it’s a super super food!”

This vegan gluten-free salad goes well with vegan gluten-free black-eyed peas and brown rice vegetable soup and vegan gluten-free Waldorf salad, in case your tradition also includes red grapes to ring in the New Year.

Of course, if you prefer not to even fix the dressing for your kale, much less wash and stem the kale, you can simply buy Brad’s Raw Leafy Kale in either Naked Plain Vegan Cheese flavor or Vampire Killer Garlic & Vegan Cheese flavor.
