Various ways to make cornbread

Cornbread is a southern favorite.  It is easy and inexpensive to make.  It can also be made in a variety of ways.  If you like a sweet cornbread, you can buy Jiffy corn muffin mix 3 for a $1.00 just about anywhere.  This is a good deal and all many of us know as cornbread because of the convenience.  If you would rather have homemade, try this easy and inexpensive recipe from All recipes.  

If you would like a more savory cornbread, try Tenda-Bake Self rising cornmeal mix.  You can buy a five pound bag for about $2.50.  It is carried at many of the local grocery stores such as Piggly Wiggly, IGA and Bi-Lo.  The recipe is on the back of the bag.  A good homemade recipe can be found at About.com

Cornbread is also very versatile.  You can add many different things to cornbread for a different taste.  Jalapeños and grated cheese can be added for a Mexican style cornbread.  Creamed corn can be added to change it to a bread pudding consistency.  Broccoli, grated onions, and grated cheese can be added for a wonderful broccoli cornbread.  The batter can be fried in butter for a change.  It can also be made into muffins.  Food Network has many different recipes to try.  You can add cubed cornbread to a bread pudding recipe for a different texture. Leftover cornbread can be crumbled for a bread topping for a casserole.

Cornbread can also be used for dressing or stuffing.  It hold flavors better if it is a little stale.  Crumble the cornbread and either white bread or leftover biscuits together.  Add sautéed onions and celery, 2 beaten eggs and enough broth to wet the crumbs thoroughly.  Season to taste and bake for at least 30 minutes at 350 degrees.  A great recipe can be found at About.com.

Whenever you go out to eat, try the cornbread.  It never seems to be the same from place to place.  There is a small café in our area that makes the best fried cornbread ever.  If you are ever around Scranton try the Scranton Café
