Ahh, pancakes. One of the most delicious forms of the most important meal of the day. Why not indulge in some fluffy, delicious pancakes that also pack a healthy protein punch, thanks to the use of greek yogurt?
This vanilla greek yogurt pancake recipe (inspired by this recipe from This Mama Cooks) will leave you feeling full and satisfied, but not over stuffed like a massive stack of traditional buttermilk pancakes can so often do.
- 1 cup oats (type depends on preference and desired pancake texture)
- 6 egg whites
- 1 cup fat free vanilla greek yogurt (those pictured used Yoplait)
- 1/2 teaspoon ground cinnamon
- 1 tablespoon honey
- 1/2 teaspoon baking powder
Combine ingredients in a blender and puree.
Pour approximately 1/4 cup pancake batter onto a preheated skillet (sprayed with nonstick spray) at a time.
Once batter starts to bubble, flip pancake and cook to desired brownness. Repeat until all the batter is used up.
Drizzle with syrup or top with jam and enjoy!
