Sometimes, you just need a recipe that will take up the least amount of time, possible. After a hard day at work, who wants to slave away in front of their oven for an hour? Here's recipe created by my mother that's easy, cost-effective and takes less than 20 minutes to make. What's more, its cool and refreshing flavor will mask the heat of the Florida sun. Bon Appétit!
Vanilla Coconut Pudding Pie
1 6c. package vanilla pudding, prepared
1 T sugar substitute
1/2 and 1/4 c. shredded coconut, divided
Prepare the pudding per package instructions and mix in 1/2 c. coconut. Place in fridge to cool.
Pour the whipping cream and sugar substitute into a small mixing bowl and mix until soft peaks form. Set aside.
Pour the pudding mixture into the pie crust. Top with whipped cream and sprinkle with the remainder of the coconut. Refrigerate before serving.
