Valentine's Day red velvet waffle recipe

We love breakfast dinners in our house, and what better day than Valentine's Day to have one! Red velvet cake is a traditional fun dessert to have for your sweetie today. But take this fun idea and turn it into a breakfast dinner with my red velvet waffles!

Recipe:
2 cups flour
1 1/3 cups sugar
1/4 teaspoon salt
1 teaspoon baking soda
4 teaspoons cocoa powder
1/4 cup butter, melted and cooled slightly
2 cups buttermilk
2 egg whites
1 teaspoon vanilla extract
4 teaspoons red food coloring
whipped cream for serving

Method:
Melt the butter in the microwave, set aside to cool. Turn on your waffle iron to medium-high heat.

Combine the dry ingredients in a large bowl with a whisk. Slowly add the butter, then the buttermilk. Stir to combine, then fold in the egg whites.

Mix with a hand-held mixer on medium speed for about 5 minutes.  Add the vanilla and food coloring.

Spoon your batter on to your hot waffle iron, cook until done, according to your iron's directions.

Keep the waffles warm in a 200-degree oven, while you finish cooking all the batter, and any sides you have to finish up.

Serve with whipped cream, to those you love!
