Valentine's Day recipe: Last-minute romance cake in a mug

Who needs a super-fast gift for Valentine’s Day? Why not whip up a pair of individual chocolate cakes, made in the microwave in pretty mugs?

A home-baked Valentine’s Day dessert may be just right for sweethearts choosing to stay in for a cozy February 14 heartfelt holiday celebration.

First, gather the ingredients for Valentine’s Day romantic mug cakes.

  • 1/2 cup flour (unsifted)
  • 1/2 cup sugar
  • 3 tablespoons unsweetened powdered cocoa
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/4 cup milk
  • 1/4 cup vegetable oil
  • 1/2 teaspoon vanilla extract

Don’t forget a selection of extras.

  • Strawberry ice cream (or another favorite flavor)
  • Ice cream topping (such as butterscotch, caramel, chocolate, or fudge)
  • Chopped nuts
  • Whipped cream
  • Maraschino cherries

Some Valentine's Day cooks even break up leftover Christmas candy canes (by pounding them inside a sturdy zippered plastic bag) and sprinkle them on top.

Here’s how to make Valentine’s Day cakes in mugs.

Begin by mixing the flour, sugar, powdered cocoa, and salt in a small bowl. Stir in the egg, milk, oil, and vanilla extract.

Divide the mixture into two microwave-safe coffee mugs. Place both mugs in the microwave, and cook on high for about 4 minutes. The mug cakes are done when the tops begin to puff up.

Allow the mug cakes to cool somewhat before adding ice cream and selected toppings and serving immediately. What a delicious treat for a sweet Valentine’s Day surprise.
