Valentine’s Day 14-Karat Cake

Dazzle your love this Valentine’s Day with this brilliant 14-Karat Cake. This carrot cake has applesauce to keep it moist and plenty of spices to liven things up.

What You Need:

(Makes: 18 servings)

1 & 1/3 cups of sugar

2 eggs

2 egg whites

1/2 cup of unsweetened applesauce

1/3 cup of canola oil

1 cup of all-purpose flour

1 cup of whole wheat flour

1 & 1/2 teaspoons of baking soda

1 teaspoon of salt

1 teaspoon of ground cinnamon

1/2 teaspoon of ground allspice

1/4 teaspoon of ground cloves

3 cups of shredded carrots

1/2 cup of golden raisins

For the Frosting:

6 ounces of cream cheese

1 tablespoon of butter, softened

1/2 teaspoon of vanilla extract

3 cups of confectioners' sugar

Garnishes: 1/4 cup of chopped walnuts

3 tablespoons of flaked coconut, toasted

What to Do:

STEP 1) In a bowl, combine the sugar, eggs, egg whites, unsweetened applesauce and canola oil until smooth; set aside.

STEP 2) Combine the all-purpose flour, whole wheat flour, baking soda, salt and spices; add to the egg mixture and mix well. Stir in carrots and raisins.

STEP 3) Pour into a 13 x 9 inch baking pan coated with cooking spray. Bake at 350 degrees for 30 to 35 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.

STEP 4) Make the frosting: in a bowl, beat the cream cheese, butter and vanilla until smooth. Beat in sugar. Frost the cake. Sprinkle with walnuts and coconut. Refrigerate.
