With Thanksgiving come and gone, typically there are mounds of leftover food hanging around your house. After a day or so of cold turkey sandwiches, many people are bored with turkey and can spoil easily waiting for the rest to be eaten.
Try not to waste your Thanksgiving leftovers, but use them for another meal when you are in a rush and need a quick dinner. There are many different ways that you can portion out leftover food for your freezer to use at a later date.
- Turkey Pot Pie: use 1 cup of cooked turkey, mix it with 1 can of cream of mushroom soup, 1 cup of turkey gravy and 1 cup of veggies (these can be leftover veggies or frozen veggies). Mix and pour into an 8x8 cake pan or casserole dish and top off with leftover potatoes. Freeze until needed.
- Turkey Soup/Stew: Mix up leftover turkey, veggies and diced potatoes with turkey stock for a heart-warming comfort soup. For stew, use a little flour or corn starch to thicken it up.
- Mini-TV Dinners: Re-use empty foil pie plates and make up turkey, potatoes, stuffing and veggie dinners again. Cover and stack in your freezer for those days when you are in a hurry for a meal and need a good hearty dinner.
There are many other things you can do with your leftovers, be creative and try using different side dishes or seasonings to make your turkey into a new dish!
