Use leftover barbecue foods to make cool summer treats

If you miss the Big Apple milkshakes from Johnny Rocket's, which had occupied a spot at Katy Mills Mall, you don't have to drive out to San Antonio to taste one. Use the leftover apple pie from your Fourth of July celebration to create your own super milkshake. This ultra-rich treat is also inspired by Houston's own Katz's Deli, which sells a milkshake with an entire piece of cheesecake thrown into the blender.

Ice Cream Pie Shake

3 scoops vanilla ice cream

1 to 2 cups milk (use more to make a thinner shake)

1 tsp. vanilla extract

1 small piece of apple pie, cheesecake or pie of your choice

Whipped cream

Cinnamon

Cherries

  1. Combine ice cream, milk, vanilla extract and pie into a blender.
  2. Blend together to the desired consistency.
  3. Serve in two tall glasses.
  4. Top each milkshake with whipped cream.
  5. Sprinkle each shake with a dash of cinnamon and add cherries to the top of each whipped cream dollop.

Did you serve sweet Hawaiian or brioche buns with your hamburgers for the Fourth of July? Use those to create unique ice cream sandwiches. The sweetness of the bread combined with the cool ice cream will make a taste unlike the typical chocolate and vanilla ice cream sandwich you may have had. This Italian dessert has appeared in other parts of the country. Comment if you have seen it around Houston. To make it more authentic, use gelato between the buns.

Brioche Ice Cream Sandwich

1 brioche (or Hawaiian sweet) bun, halved

1/2 tbsp. butter

1 small scoop ice cream

  1. Spread the cut sides of the brioche with butter.
  2. Toast the bun in a skillet or under the oven broiler until slightly crisp on the outside.
  3. Place the ice cream scoop between the halves of the bread and serve warm.
