The proper pairing of food and spirits can be a seductive experience. Chef Nick Shipp of Upper West is known for combining just the right touch of savory satisfaction with the selected spirit of the evening.
These special pairings have become a sold out specialty of Upper West Restaurant. On Wednesday, February 20th, Upper West Restaurant hosts “French Connection” a Rémy Martin Tasting. Chef Shipp once again steps up the high art of dining with a cognac tasting from Rémy Martin
I had the chance to do a tasting and interview Chef Nick Shipp about past pairings and how he creates his magic. “As far as pairing the food, I try to come up with a basic theme (French, Mexican, etc.,) and then try to mix in are Upper West brand of global plate structure,” says Chef Nick. “We also work close with the ambassador from each company to figure out the best way to pair each dish with each individual spirit.”
An ambassador from Rémy Martin has worked with the Chef and will attend the event to answer questions or discuss how and why the pairings were combined.
A signature cognac, Rémy Martin, uses a select type of grapes from the most respected regions of France. The ambassador will give a brief history of the spirit and offer some interesting trivia.
Starting off the evening with a Bumble V paired with golden satsuma infused beets drizzled with tomato-ginger vinaigrette, and as Chef Nick calls it “remyified” goat cheese and cilantro.
For the next portion of the meal, enjoy a REMY V.S.O.P paired to perfection with a classic, yet inventive nicoise layered with a Moroccan spiced tuna loin, piquillo-dried tomato concasse, complimented by green bean puree. Add to that a kalamata pistou and egg yolk “granita” and your taste buds will be eternally grateful.
A hearty main course offers braised beef along with potato puree “Robuchon style,” a hint of fennel and fresno chili, dressed to perfection with sauce à l’orange aigre-douce. The cognac of choice is 1738 Accord Royal, a Rémy Martin classic.
An intermission of sorts will cleanse your palette with a zesty Meyer lemon granite with cucumber and thai basil
The meal is exquisitely ended with an extra dark chocolate mousse topped with salted toffee crumble and cinnamon-coffee powder.
