Untitled offers two tasting menus, a two course ($44 a person) or a three course ($69 a person). With either option, the entire table must participate in the tasting menu.
At a recent visit to Untitled, our table ordered the three course tasting menu. For that evening, the menu consisted of:
Burrata and figs, with grilled asparagus, surryano ham
Deviled farm eggs, bacon-chives, peperonata
Oysters Rockefeller - spinach fontina fondue, bacon brewed crumbs
Drunk devils on horseback- st Pete's blue mousse, pistachio honey
Crispy squash blossoms- house made ricotta, truffle honey
Gulf shrimp - bacon jam, stravecchio cheese grits, corn nuts
Salmon belly tartare- seeded crackers, fave bean remoulade
Dry aged New York strip - bone marrow butter, bordelaise
Striped bass - house cured guanciale, white beans and dandelion greens
Grilled asparagus - smoked onion jam, black garlic gremolata
Whiskey ginger carrots - fennel yogurt, pickled grapes
While the entire menu was superb, a few dishes were exceptional standouts. The crispy squash blossoms with house made ricotta and truffle honey were delicate, flavorful bites. The subtle squash blossom had a lightly battered texture that offered a satisfying crunch to contrast the creamy, sweet ricotta. Since this dish is on the regular menu as well as the tasting menu, the dish is highlight of the chef's deft hand.
The two entire selections of striped bass and New York Strip were a complimentary pair. The New York Strip shines under the decadent bone marrow butter. Already tender and juicy, the butter amps up the simply seasoned steak. For a more delicate entree, the striped bass is seared and flaky. The bright greens balances the sweetness of the fish.
Untitled is located in River North on Kinzie. The establishment is opened Monday through Saturday. For more information on current menus, operating hours and live entertainment, please visit www.untitledchicago.com.
