Uncooked corn starch fights diabetes by preventing blood-sugar dips

Research shows that people with diabetes can curb hunger and prevent dangerous dips in blood sugar by consuming uncooked corn starch.

Endocrinologist Dr. Francine Kaufman, former president of the American Diabetes Association, detailed the research in her bestselling book, Diabesity.

“Raw corn starch serves as a reservoir of glucose in the intestinal tract because it is digested very slowly, over period of six to eight hours," she wrote.

If left untreated, low blood sugar can have serious health consequences, including coma or even death. Young patients who have severe hypoglycemia (or dangerously low blood sugar overnight) are especially vulnerable.

Diabetics often follow strict diets to minimize potentially fatal blood-sugar surges, but that doesn't mean you're resigned to a lifetime of bland, tasteless food.

Using the knowledge garnered from her research, Kaufman began experimenting in her kitchen to create a snack that would control blood sugar, taste great and suppress appetite.
