Uncooked cornstarch fights diabetes by preventing blood-sugar dips

Studies show that people with diabetes can curb hunger and prevent dangerous dips in blood sugar by consuming uncooked cornstarch.

Endocrinologist Dr. Francine Kaufman, former president of the American Diabetes Association, detailed the research in her bestselling book, Diabesity.

“Raw cornstarch serves as a reservoir of glucose in the intestinal tract because it is digested very slowly, over period of six to eight hours," she wrote.

If left untreated, low blood sugar can have serious health consequences, including coma or even death. Young patients who have severe hypoglycemia (or dangerously low blood sugar overnight) are especially vulnerable.

People with diabetes often follow strict diets to minimize potentially fatal blood-sugar surges, but that doesn't mean you're resigned to a lifetime of bland, tasteless food.

Using the knowledge garnered from her research, Kaufman began experimenting in her kitchen to create a snack that would control blood sugar, taste great and suppress appetite. The result was ExtendBar. Today, Kaufman’s formula is used in 17 different snacks made by Extend Nutrition, which include protein bars, shake powders and crunchy goodies.

Studies indicate that uncooked cornstarch has a stabilizing effect on blood sugar, and in-house research shows Extend Nutrition snacks keep blood sugar stable for up to 9 hours. This is because ExtendBar bars and shakes are low-glycemic index foods that are slowly digested and produce a low rise in blood-glucose levels.

“We know that lifestyle changes can prevent diabetes,” said Dr. Kaufman “We’ve proven that if people eat right, lose weight and become physically active, they can halt the progression to full-blown diabetes.”
