LONDON – Only the 1,900 invited guests at the royal wedding for Prince William and Kate Middleton next Friday, April 29, will get to see and taste the two wedding cakes first hand, however we do know who the designer is and what kind of cake it will be.
The royal couple's wedding cake will be a “multi-tiered, traditional fruitcake” baked by English baker Fiona Cairns. While the actual design remains a secret, Cairns said the cake will have a strong British floral theme the master baker will use to create intricate piping and scrollwork to create leaves and flowers.
Cairns is known to be a cake maker to the stars such as Beatle Paul McCartney who has built a thriving business since starting to bake at her kitchen table 25 years ago.
Middleton is said to have asked Cairns to represent about 16 different blooms, one of which is “Sweet William.” The use of foliage dates back to the Victorian era, palace officials have said.
"There is the bridal rose which symbolizes happiness; the oak and acorn, which is an architectural detail around the room where the cake will be and which symbolizes strength and endurance; and there is a lily of the valley, which symbolizes sweetness and humility; and ivy leaves which symbolize marriage," Cairns said. The cake is expected to be prominently displayed at the Buckingham Palace reception.
Prince William picked out the second cake which will be a grooms cake made of cookies and chocolate biscuits from an age old royal family recipe. The cake will be served alongside the couple’s official wedding cake.
McVitie’s Cake Company who is known for their tasty chocolate covered biscuits will make the grooms cake. The company has made cakes for the royal family for decades, including the official cake for the 50th wedding anniversary of Queen Elizabeth II and Prince Philip.
Paul Courtney, the firm's cake designer, said the cake will have dark chocolate, broken up tea biscuits, and some secret ingredients. "When Prince William was a young boy he would have it for tea and really enjoyed it," Courtney said.
