Two-ingredient flatbread

So easy that 4 year-old Alex did most of the work!

Whether you call it flatbread, fry bread, naan, or gordita, here's a recipe that only takes two main  ingredients -- self-rising flour and plain yogurt (plus a sprinkle of salt). It's incredibly simple to make, takes very little time to fry, and can be topped with an amazing assortment of ingredients and used in a number of ways. Try them for yourself -- if Alex can do it, you can too!

Ingredients:

  • 1 1/3 cup self-rising flour
  • 5 oz. plain yogurt
  • sprinkle of sea salt

Steps:

  1. Combine the ingredients and mix them until they form a dough. If it is too sticky, add a little more flour; if too dry, add a small amount of water.
  2. Put some flour on your rolling surface and knead it for a minute or so.
  3. Turn your non-stick griddle on high (you'll want it hot when you start frying).
  4. Divide the dough into 4 balls and roll them out, one at a time. They should end up the size of a plate.
  5. Fry them for about 3 minutes on each side, until they start to brown. You shouldn't need any oil.
  6. Serve and enjoy!

Serving suggestions:

  • Drizzle them with honey for a wonderful dessert.
  • Spread with hummus or peanut butter.
  • Top with spaghetti sauce, shredded cheese, and pizza toppings, then broil for 30-60 seconds for mini-pizzas.
  • Fill with your favorite taco ingredients to make gorditas.

Tips:

  • We turned our electric griddle to 400 and it worked fine.
  • If you get a brand of yogurt without gelatin, these will be vegetarian.
  • You could add some herbs (fresh or dried) to the dough to make them extra delicious. 
  • Since there are no preservatives, they won't last long but that shouldn't be a problem -- we made a double batch and they were gone in minutes.
  • If you roll them really thin, you can make a wrap with them but beware -- they will puff up.

Be sure to check your neighborhood health food store (like the Wedge Community Co-Op on Lyndale Avenue South) for the best ingredients!
