Try these fast and easy recipes for yogurt smoothies and yogurt parfaits. Use fruits from Seattle farmers markets that you have preserved for use throughout the year, like peaches, cherries and other favorite Pacific Northwest berries. Include whole grains to get your day started right and keep your energy going all morning long.
Peach Melba Smoothies
Makes 2 servings
6-8 ounces low-fat or non-fat plain, honey, or vanilla yogurt
1 cups frozen or canned sliced peaches
1 cup frozen or canned raspberries or other berries (blueberries, blackberries, etc.)
1 cup milk or crushed ice
Optional: 1-2 tablespoons honey, or to taste
Optional: 2-4 tablespoons ground flax seeds
Place all ingredients into blender in the order listed and puree until smooth. Pour into two glasses and serve.
Breakfast parfaits with yogurt, fruit and whole grain cereal
Makes 1 serving
1/2 cup whole grain granola or ready-to-eat cereal
1 cup fresh, canned or frozen fruit*
6-8 ounces plain yogurt (or substitute any favorite flavor)
2 tablespoons honey (optional with flavored yogurt)
*Some popular fruits for yogurt parfaits include almost any fresh fruit in season from cherries to watermelon, canned berries or peaches, frozen berries or peaches, and dried apples or cranberries.
In a 20-ounce or larger cereal bowl or glass, place half of the cereal, top with half of the yogurt drizzled with 1 tablespoon honey, and then top with half of the fruit. Repeat layers. Yogurt and fruit parfaits may be prepared one day ahead. Cover and refrigerate until ready to serve.
