Tuna Melt Quesadilla Recipe

Ingredients for Tuna Melt Quesadilla:

Yield: 1 quesadilla

  • ½ cup prepared tuna salad (tuna, mixed with chopped apple, a little dill seed, and mayonnaise)
  • ¼ cup grated cheese (co-jack, Swiss or Monterrey Jack work well)
  • 2 tortillas
  • 1 tablespoon olive oil

Directions for making Tuna Melt Quesadillas:

You need a griddle or a skillet large enough so the tortilla fits flat in the bottom. Add the olive oil and spread it across the griddle or skillet. Heat it up over medium heat for just a couple minutes.

Place a tortilla in the bottom of the pan. Sprinkle it with half of the cheese. Put the tuna salad in the middle of the tortilla. Place the remainder of the cheese on the top of the tuna salad. Place the second tortilla on the top and push it down, thus flattening it and causing the tuna salad and cheese to spread to the edges of the tortilla. Brown on one side, then flip to the other side. Remove from heat, then slice into wedges with a pizza cutter to serve. Serve immediately.
