It all begins with a healthy recipe for tuna salad. Make it the way you absolutely love it. If you’re looking to decrease the calories, however, watch the mayonnaise you’re using. There are so many lighter versions of the real thing now and they taste as good as the full-fat version. Whether you’re a Miracle Whip user or you prefer real mayonnaise, check out the labels and compare the tastes. Depending on the brand you buy, the light versions have about half of the calories and fat – well worth switching.

Now check out the type of tortilla you want. There are some wonderful tortillas with 10 – 12 grams of fiber. If high fiber isn’t as important as no carbs, check out those as well. Tuna Melt Quesadilla Recipe

Ingredients for Tuna Melt Quesadilla:

Yield: 1 quesadilla

  • ½ cup prepared tuna salad
  • ¼ cup grated cheese (co-jack, Swiss or Monterrey Jack work well)
  • 2 tortillas
  • Olive Oil

Directions for making Tuna Melt Quesadillas:

You need a griddle or a skillet large enough so the tortilla fits flat in the bottom. Add a little olive oil and make sure that the oil spreads across the griddle or skillet. Heat it up over medium heat for just a couple minutes.

Place a tortilla in the bottom of a pan. Sprinkle it with half of the cheese. Put the tuna salad in the middle of the tortilla. Place the remainder of the cheese on the top of the tuna salad. Place the second tortilla on the top and push it down, thus flattening it and causing the tuna salad and cheese to spread to the edges of the tortilla. Brown on one side, then flip to the other side. Remove from heat, then slice into wedges with a pizza cutter to serve. Serve immediately.
