In the dictionary under comfort food, there should be a picture of tuna noodle casserole. It is the ultimate in foods that make you feel that the stars are truly aligned for you. Sometimes we concentrate so much on healthy recipes that we forget those that bring us mental health as well. This tuna noodle casserole has a delicious creamy sauce and a buttery, crunchy topping – it truly doesn’t get any better than this.

Some recipes for tuna noodle casserole are made simply by opening a can of this and a can of that and mixing everything together. Here is a recipe that adds other ingredients which create a truly spectacular dish.

The fresh bread crumbs are a must! Just rub a few slices of fresh bread over a food grater and you will have some in no time. Although it’s tempting to use store-purchased bread crumbs, the fresh crumbs make a wonderful difference.

Tuna Noodle Casserole Recipe

Ingredients for Tuna Noodle Casserole:

  • 12-oz. package noodles
  • ½ cup onion, chopped finely
  • ½ cup red bell pepper, chopped finely
  • 3 tablespoons butter
  • 2 cans cream of mushroom soup
  • ½ cup mayonnaise
  • ½ cup milk
  • 2 cups frozen peas
  • 12-oz. can tuna, drained
  • Salt, pepper, garlic powder to taste
  • 2 cups cheese, grated (cheddar or co jack work well)
  • 2 cups fresh bread crumbs (make by grating fresh bread with a cheese grater)
  • 3 tablespoons butter, melted

Directions for making Tuna Noodle Casserole:

Preheat the oven to 400 degrees. Butter a large casserole dish.

Cook the noodles according to package directions, but cook for 3 minutes less (they will finish cooking in the oven and will absorb some of the sauce). Drain well and remove the noodles from the pan.

While the noodles are draining in a colander, use the pan you cooked the noodles in to melt the 3 tablespoons butter then sauté the red bell pepper and onion until they are limp. Remove from the heat, and add the noodles, soup (undiluted), mayonnaise, milk, frozen peas, tuna, and spices (to taste). Heat through, but don’t bring it to a boil. Mix the ingredients well and spread evenly in the prepared casserole dish; sprinkle the cheese over all. Bake at 400 degrees for 20 minutes.

Mix the bread crumbs with the melted butter. Remove the casserole from the oven when the cheese has melted, spread with the crumbs, and return to the oven for 10 minutes. Remove from the oven and let it sit for 10 – 15 minutes, then serve.
