Vegkitchen posted a few great recipes on Dec. 5, 2013. One in particular stood out as one that would appeal to both those watching their calories and children alike. Most children will like (maybe even love) sweet potato fries. They are packed full of vitamins including beta carotene, minerals and antioxidants.
This recipe would be a great addition to a veggie burger or vegetable wrap.
It serves four people.
· 4 large sweet potatoes (or 3 Yukon potatoes and 2 sweet potatoes)
· 2 tbsp of oil
· Salt to taste
Preheat the oven to 450 degrees. While the oven is heating up, peel the potatoes slicing them in steak fries shakes (about ½ an inch thick). In another bowl, combine the cut up potatoes with the oil and salt mixture. Coat the potatoes well and put the potatoes on a baking sheet. Cook them for about 20-25 minutes until golden brown. Stir the fries twice while baking.
Tip: Try different spices to make the fries either very spicy or mild depending on your preference.
