- 1 cup quinoa
- 1 1/2 cups vegetable broth
- 1/2 cup chunky salsa
- 1/2 cup yellow onion, diced
- 1/2 green pepper, diced
- 2 tomatoes, diced
- 2 avocados, diced
- 1 (16-oz) can black beans
- 4 eggs
- 1/4 tsp salt
- 1/4 tsp pepper
- 3 tbsp olive oil
- Cheddar cheese (optional)
Start by rinsing the quinoa thoroughly in a fine-mesh strainer. Next, heat one tablespoon of oil in a large skillet. Lightly saute the onion and green pepper. Once vegetables are tender, pour the rest of the oil into the pan. Add the dry quinoa and lightly toast for a minute.
Next, add the vegetable broth, salsa, salt and pepper to the pan. Bring liquid to a boil. Reduce heat to a simmer and cover. Cook for 15 minutes. Still covered, remove from heat and let stand for another five minutes.
Meanwhile, heat the black beans in a small pot. In a small saute pan, scramble the eggs. Combine the beans, eggs, tomatoes and avocado with the quinoa mixture. If desired, top with grated cheddar cheese.
