The New Year brings new trends, even in the baking world. What was trending in 2012 may not be trending in 2013 and what was expected to trend in 2012 may not have been much of a hit. The National Restaurant Association conducts a Chef’s Survey every year for “What is Hot” in the culinary world.
For 2013 the survey said the following are expected to be the top five “hot” desserts:
1. Artisan/home-made ice-cream
2. Bite-size/mini desserts
3. Savory desserts
4. Deconstructed classic desserts
5. Dessert combos
Out of the five, bite-size/mini desserts seem to be everywhere. Cake pops and the Babycakes product were extremely popular in 2012 and mini desserts that were everywhere are expected to continue with their popularity.
Try your hand at baking these 2013 desserts. Make ice-cream like a professional; get an ice cream maker or buy the attachment for a Kitchen Aid stand mixer and mix up this pistachio ice cream. Make a variety of bite-size desserts/baked goods for your next party. Try mini peanut butter brownies, banana split bites, or pop-tart pops.
If you’re brave enough to try a savory dessert try a thyme, lemon, and sea salt shortbread. If you like to stick to sweet desserts maybe try deconstructing a classic like black forest cake or s’mores.
