On July 15, Walt Disney World Resort announced that Trattoria al Forno will open at Disney’s Boardwalk, located at the Epcot Resort area of Walt Disney World. The new restaurant will serve food and wine representing Italy’s various regions, and offer Neapolitan-style pizza pizza.

According to the Disney Parks Blog, the new Italian restaurant will specialize in “simple food” baked in wood ovens, a diverse menu that showcases Old World cooking techniques, and seasonal dishes. Trattoria al Forno will open in December of this year.

Neapolitan-style pizzas will be one of the featured dishes. This type of pizza, representing the Naples region, uses wood-ovens, uses tomatoes and fresh mozzarella and a hand-formed crust. Trattoria al Forno will make its own mozzarella daily, as well as other items like cavatelli.a type of pasta.

The menu for Trattoria al Forno includes pasta, meat, seafood, and vegetarian dishes that represent the regional diversity of Italian food. Some dishes will be seasonal, as in the risotto that will be a standard menu item.

In providing a taste of what Trattoria al Forno will offer, Disney Parks Blog offered this teaser:

Italy is just half the size of Texas but has wonderfully diverse cuisine, and Trattoria al Forno will showcase dishes from Italy’s various regions – for instance, braised beef Bolognese with house-made cavatelli from Bologna, semolina tagliatelli carbonara from Latium (more specifically Rome), pork chop alla Milanese named after the city of Milano. And you’ll find classic Italian favorites: chicken breast alla Parmagiana with tagliatelle pasta; shrimp with garlic, capers and anchovy butter with polenta; whole roasted fish with roasted vegetables; baked lasagna; grilled steak; slow-cooked lamb shank with polenta; and eggplant rollatini.

Disney also noted that restaurant will have touches that add to Trattoria al Forno’s ambiance. For instance, and Italian flywheel slicer will slice thin Italian meats to be served with a variety of olives and caponata, an eggplant dish. Vegetarian entrées will also be featured, such as a Campanelle pasta with green beans, roasted potatoes and Genovese pesto.

Trattoria al Forno will offer a full evening of dining. Classic Italian desserts –tiramisù, lemon panna cotta with almond crunch and berries, gelatos, and the signature bomboloni (Italian donut holes) with dark chocolate and vanilla gelato – and espresso drinks and a signature-blend Italian coffee, roasted exclusively for the restaurant, will be available.

In addition to its coffee and espresso drinks, the restaurant will have an extensive beverage menu. It will serve Italian wines from various regions, including Tuscany, Veneto and Piedmont. The wine list will include more than 60 options by the bottle and 25 wines by the glass. Signature cocktails and Italian beers and sodas will be part of the drink options.

Trattoria al Forno will be located in the space occupied by Kouzzina by Cat Cora. As previous announced, Kouzzina, a Greek restaurant, will close Sept. 30 of this year. During the period between the two restaurants, BoardWalk’s Flying Fish Café will serve breakfast.

Trattoria al Forno will join a list of other Italian restaurants at the Walt Disney World Resort. The other restaurants include Tutto Italia Restaurante, Via Napoli and Tutto Gusto Wine Cellar at Epcot’s Italy pavilion, Il Mulino New York Trattoria at the Walt Disney World Swan and Dolphin; Mama Melrose’s Ristorante Italiano in Disney’s Hollywood Studios; Tony’s Town Square in Magic Kingdom; and Portobello in Downtown Disney.
