This is a plate that is hard to find in the United States, even in Irish restaurants because the sausages, rashers and pudding often need to be imported. However, according to one of the servers, Patrick, their pudding is made in house. Now that is what you call authentic.
What is this Irish pudding? The black pudding is a sausage made from pig's blood, meat, fat, oatmeal and a bread or potato filler. The white pudding is made just like the black pudding just without the pig's blood. While this isn't for everyone, you should definitely give it a try. It is very flavorful and if you didn't look it up, you'd never know what was in it going off of flavor alone.
