Tortellini is a quick pasta dish to serve any day of the week. I'm always trying to find new inventive sauces. This is my newest creation. You'll have it on the table lickity split.
Artichoke and Olive Tortellini with Creamy Pasta Sauce
- 1 family size package of Barilla tortellini, any flavor
- 2 TBS. olive oil
- 2 cloves of garlic, minced
- 1 14 oz. can of artichoke hearts, roughly chopped
- 1 26 oz. jar of spaghetti sauce
- 1 c. half and half
- Kalamata olives to your taste
Cook the pasta according to package instructions. Meanwhile in a medium skillet over medium heat cook the garlic and artichoke hearts in the olive oil until the artichokes are cooked down a bit. In a medium saucepan add the sauce and half and half. Add the artichoke mixture to the sauce mixture and heat through on medium to low heat. Mix the pasta with the sauce and add olives right before serving. Serves 4-6. Serve with toasted garlic bread and a side salad.
