It is just a biscuit sandwich, but this is the South and the gluten-free crowd wants in on the action. I grew up in the Midwest where biscuits were smothered in homemade sausage gravy. I do miss those biscuits, but down here in the South it is all about the biscuit sandwich. Thankfully, there are two local bakeries producing gluten-free biscuits and stuffing them with veggies, meats, cheeses, and eggs:
Gluten-Free Cutie - this lovely bakery is open in historic downtown Roswell and they offer biscuit sandwiches Saturday mornings from 9-12 p.m. These sandwiches are pretty traditional and they can be made dairy and soy-free as well. Offerings include: fried green tomato biscuit, bacon cheddar biscuit, ham and strawberry pepper jelly biscuit, and plain biscuit. Their breakfast menu changes weekly, so check with them to see if the biscuits are on the menu before heading over.
Good Karma Coffee House - this bakery serves breakfast every day of the week and offers dairy, soy, and nut-free biscuits for order: plain and with eggs, turkey or pork sausage, bacon (only on Saturdays and Sundays), chicken (only on Saturdays and Sundays) and cheese (regular and dairy-free).
Southbound - makes a lovely gluten-free biscuit that is served with the lunch and dinner bread basket, but they aren't open for breakfast. Maybe you can talk them into making a biscuit sandwich for lunch? They should have all of the ingredients on hand, eggs, cheese, and bacon, right?
